He attended Le Cordon Bleu in Portland and graduated in 1994. He worked in Los Angeles at several restaurants, including that of Citrus, founded by French Chef Michel Richard.
After he resigned from his role at Citrus, he travelled abroad in order to learn about different cuisines and cultures in Europe and Northern Africa. In 2004 Malarkey relocated with his family to help open The Oceanaire Seafood Room in San Diego as an operating partner and the executive chef.

He was a mentor on ABC’s Cooking reality TV show The Taste alongside Anthony Bourdain and was a guest chef on Hell’s Kitchen in 2014.
After his appearance on Top Chef in 2010, while still living in San Diego, he opened Searsucker alongside James Brennan, a nightclub developer and owner of a nationally acclaimed restaurant by the name of Stingaree.
In 2008 he sold the nationally and internationally acclaimed Herringbone and Searsucker restaurants; to the Hakkasan group for approximately 25,000,000 US Dollars. He also resigned from his role in the company in order to focus on the restaurant he opened with his business partner, Christopher Puffer. The restaurant was named Puffer Malarkey and included the following (chain) restaurants: the Herb & Wood, the Herb & Sea, the Herb & Ranch. The Herb & Eatery, Animae, the NIMA Café, The Green Acre and Farmer & The Seahorse. His award-winning restaurant in San Diego, Herb & Wood, is considered one of the best in America.
